Best whole wheat flour

I have used only the whole kernel so far, and I was extremely happy with the results. I bake with leaven; I don't use commercial yeast. When I started baking many years ago--using then commercial yeast--the bread was dense and heavy. Your whole kernel produces a light extremely tasty bread. The crumb is beautiful. I have only one negative issue that I'm dealing with with your flour. I live in Vermont, and when I buy your flour, I'm not buying locally. Vermont does grow wheat. My results with Vermont flour are fine. And I feel badly that I'm not supporting our local farmers. But this is my problem, not yours. Based on the two times I've used whole kernel, you are doing very fine work in Illinois.

Flavorful flour
