Because Janie's Mill Spelt Flour is a whole-kernel flour (100% extraction), your cookies, quick breads, pancakes and other favorites have 100% of the taste and nutrition of the whole grain. It's high enzymatic activity also makes it a great flour for your sourdough starter.

    Spelt is an ancient grain that was domesticated around 5,000BC. It has never been hybridized for high yields, and so has retained its wholesome nutrient profile. It is particularly rich in important minerals such as zinc, iron, phosphorus, copper, and magnesium.

Great

It’s great, good quality flour. I would definitely buy again if shipping wasn’t so expensive. I would understand if free shipping was available if spent 50 or more but can’t quite store 100 dollars worth of flour in the moment. If there’s a shipping sale I. The future I will buy again.

Delicious

I have been using the spelt flour to make sourdough sandwich loaves in Pullman loaf tins. The crust is delightfully crunchy and the crumb is soft and chewy. My kids (ages 3, 5, and 9) are enjoying their sandwiches which is about as high a rating you can hope to achieve. Will definitely be purchasing more. Thank you!

Wonderful in my Starter

I’ve been using a blend of this, their high protein bread, and dark rye flours to feed my starter. It’s so amazing. It has such a good aroma and it tastes so good in final products. I’ve replaced part of the flour with spelt for a regular sourdough loaf, some ciabatta roles, and a focaccia. It’s so good, and it tastes healthy in a really good way. I’ve already bought more!
