    Red Fife has deeper, more complex flavors than common hard red winter wheats, and breads made with it bake up moister, with a cohesive crumb. Because Red Fife has high gluten potential, it can be used by itself or mixed with low gluten flours such as rye.

    Red Fife wheat’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

One of my favorite bread flours

I always have Red Fife berries and flour on hand and add the whole grain flour in artisan's breads, pizza, and other bakes, as well as feeding my starter. I love the flavor and high protein performance for extensibility and elasticity. Red Fife is a great, flavorful performer.

My favorite flour

What a amazing product, I use it alone or mixed with higher gluten flours. I really don’t care to make a textbook looking bread, it is about flavor and yeas this variety doesn’t disappoint. I discovered Janies mill at local store in Ann Arbor and since then I order online, purchased 50 lb Fife and red turkey, both outstanding flours. I used to bake white sourdough breads, but after discovering this mill and while wheat heirloom, I will never go back. Thanks very much for timely delivery.

Love this flour!

I bought the red fife because I like to experiment with different flours. This flour gave the bread amazing flavor. Everyone who has tried it has commented on how good it tastes. My daughter loved it so much she started doing sourdough and is using it in her breads. Thank you Janie’s Mills.
